We love steak. We wanted to show that you can go to a restaurant and get great steaks in Ireland while having a lot of fun doing it. We are very proud to be Irish and lucky for us Irish beef is renowned throughout the world for its superior taste. Our rainy climate, although a pain in the ass at times, is perfect for growing the best grass that in turn makes our beef taste so good.
So we had the best beef, we then set about finding the best butcher. We never settle for second best and we were adamant that our butcher only use the finest traditional methods to deliver our beef. There was only one man for the job. Rick Higgins is a 4th generation butcher based in Sutton, Co. Dublin. Every week Rick hand picks the cattle for slaughter. He then hangs and dry ages them for a minimum of 35 days. This process of dry ageing creates a greater concentration of the beef flavour and it also results in a more tender beef. Finally, Rick hand cuts the beef to our particular specifications.
