Samphire is a dining concept brought about by the pressing need for more diverse restaurants in the North Dublin area. Our mission is to deliver "Classical French Cuisine with a Modern Irish Twist" in a setting with spectacular sea-views.
More than being just a catchy name above the door, I wanted the restaurant name to relate both to the menu and our setting. Samphire is one of my favourite vegetables and it literally grows on our doorstep here in Donabate. One of our managers suggested Samphire, in that instant I knew we had the perfect name.
We strongly believe in supporting businesses in our community and where possible we source all of our ingredients locally including fish, vegetables and meat. With many Fingal famers now growing & producing vegetables & foods that could only be sourced abroad, it is now viable to source a greater portion of the food locally than just a few years ago. We are privileged to have a special relationship with some local farmers such as Brian Carrick who grows seasonal crops required by our menu's on a plot of land reserved especially for Samphire.
